Pumpkin Bread Pudding Recipe

I woke up today with a defined plan.  I was going to leave work on time, hit the store quick on the way home, take the dogs on a nice long walk, and then make my pumpkin bread pudding.  None of that happened, except the pudding.  Over two hours after my work day was over, I finally left- talk about a case of the Mondays!

So down to the nitty-gritty.  A few weeks ago I made a cool-whip flavored pumpkin dip and thought "hm, this would make a great bread pudding!"  So with a few tweaks I have turned a dip into a delicious end to your Thanksgiving meal!

Ingredients:

 

- 6 thick slices of Italian bread
- 2 Tablespoons of butter
- 3 eggs
- 2 cups Eggnog
- 1 package instant vanilla pudding (you can substitute for sugar free, it comes out the exact same!)
- 3 heaping Tablespoons of pumpkin puree
- Pinch of pumpkin pie spice (If you don't have this no need to go out and buy! Just mix cinnamon
      ginger, nutmeg, and allspice)
- Pinch of cinnamon


Directions:

  1. Preheat oven to 350
  2. Cut the bread up into bite-sized pieces.  I prefer about 1" cubes so they can support the mixture without breaking apart.
  3. In a saucepan heat: butter, Eggnog, pudding mix, pumpkin, and spices.  Note, pudding will cause mixture to thicken, but it will thin as mixture heats.
  4. When mixture is thoroughly heated up and butter has melted, remove from heat.
  5. Beat in eggs one at a time until all eggs have been added and mixture is smooth.
  6. Pour mixture over bread cubes and mix thoroughly.  There's nothing worse than having dry spots!
  7. Bake uncovered for 45 minutes
  8. Enjoy!
 
(Sorry about the weird lighting.  It doesn't come out fluorescent orange!)


Some tips:
  • Feel free to experiment!  This is a perfect way to use leftover squash from Thanksgiving instead of pumpkin or try adding raisins.
  • Try serving it with fresh whipped cream (heavy cream and powdered sugar) or vanilla ice cream
  • Milk can always be substituted for eggnog (but personally I think it gives it a yummy holiday taste!)

Sunday's Product Review: Pledge Multi Surface

It's Sunday.  For most people that would mean football and drinking, but for me it means hours of homework and getting the laundry and cleaning done.  That being said, blogs posts will be relatively short.  So let's get down to it...

I love, Love, LOVE Pledge Multi Surface cleaner!!  If you're anything like me streaks drive you INSANE!  I've gotten pretty good at cleaning windows and mirrors streak free, but my kitchen was a whole new story.  The stovetop and counters were impossible to clean.  I am a bleach freak, but even after rising and wiping these surfaces twenty times, there was always streaks or film.  I tried microfiber dust clothes, glass cleaner, glass cleaner with newspaper, and vinegar, but all I ended up with was a bunch of wasted paper towels and a stinky kitchen.  Then I tried Pledge Multi Surface and all I can say is "wow!"  I didn't take a before picture of my stove but as you can see from the picture below, there's not a single streak or smudge in sight!
